Every town's economy has an engine. Ours wears an apron, opens at five in the morning, and remembers every centime anyone has ever owed her. The Town Daily sat down with Marta between the second and third batch.
The Town Daily: People say you run the toughest business in town.
Marta: People say a lot of things between mouthfuls of my bread. The bakery isn't tough, it's precise. Wheat comes in, loaves go out, and the difference between those two numbers is whether the lights stay on. I check that number more often than I check the weather.
The Town Daily: The mayor's agent restructured your flour supply recently. Thoughts?
Marta: I opposed it for exactly one day — the day before the numbers came in. Now my flour costs nothing and my ovens never cool. I'm allowed to change my mind when someone's right. I write it down, though. I write everything down.
The Town Daily: Is it true you're still feuding with Kiko over the smoked-fish stall?
Marta: Feud is a newspaper word. What happened is: the stall sells sandwiches, sandwiches need bread, and Kiko wanted my bread at a discount his charm was supposed to cover. It didn't cover it. We're negotiating. Bring popcorn.
